Really Quick and Simple Sweet Potato and Red Pepper Soup...

This beautiful and sweet soup is very nutritious. Sweet Potatoes are a great source of vitamin C, potassium, calcium and beta- carotene. Red Peppers are also rich in vitamin C, as well as vitamin A and beta carotene. Making the soup a great source of antioxidants. Although I have made this with ordinary red peppers using the pointy red pepper make it taste even better! 1 leek, chopped 2 red peppers, deseeded and chopped 1 sweet potato, skinned and chopped a little oil 1 pint chicken or vegetable stock. 1. Heat the oil, and allow the leeks to soften. 2. Add the peppers, sweet potato and then stock. 3. Allow the soup to cook until the potato is soft. 4. Liquidise the soup and enjoy. Free Transport Worksheet

We have been studying transport. So for the Jedi Boy I made up a simple work book. The workbook contains some reading, writing, drawing and colouring in. We worked on it a page a day- he was only just reading and writing. But vary according to the age and reading ability of the child. Sorry I did make this gender specific- was also trying to encourage the Jedi Boy to do extra writing and reading practice, I have found if the topic interests him he makes more of an effort. Easy Spanish Pork Recipe

At the weekend we had a truly massive joint of pork! We have been left with enough to do another three nights of dinners. So I have been looking for easy creative ideas for left over pork- before we all get fed up with it. So tonight I came up with an idea inspired by a dish my mother makes crossed with paella, hence the Spanish flavour! I love paella rice. It is so easy to cook with. You add all you ingredients, the stock, then the rice and leave it alone until it is cooked. This recipe is quick, healthy and easy! Left over pork a small onion garlic infused oil a 400g tin of chopped tomatoes one red pepper 4 mushrooms a carrot a handfull of peas 1 teaspoon each of paprika and cinnamon 500 ml chicken stock 250g paella rice Firstly put the chop the pork and onion and blitz them in a food processor. Then heat the oil in a large pan, and the ground pork mixture, followed by the tomatoes and the chopped vegetables. Sprinkle the spices on top and stir. Add the stock and paella rice, then stir to incorporate the mixture. Bring to the boil, before turing down to a simmer, and leave it alone for 20 mins until the rice is cooked.
