Really Quick and Simple Sweet Potato and Red Pepper Soup

This beautiful and sweet soup is very nutritious. Sweet Potatoes are a great source of vitamin C, potassium, calcium and beta- carotene. Red Peppers are also rich in vitamin C, as well as vitamin A and beta carotene. Making the soup a great source of antioxidants. Although I have made this with ordinary red peppers using the pointy red pepper make it taste even better!

    1 leek, chopped
    2 red peppers, deseeded and chopped
    1 sweet potato, skinned and chopped
    a little oil
    1 pint chicken or vegetable stock.
    1. Heat the oil, and allow the leeks to soften.
    2. Add the peppers, sweet potato and then stock.
    3. Allow the soup to cook until the potato is soft.
    4. Liquidise the soup and enjoy.
